SMTP using wp-config.php

Hi I am using the SMTP plug in and when entering everything into the control panel/dash board all is well and the test email sends.

When entering password into the config file and blanking out the password in the dash board it fails to authenticate.

Can I check:
1) Should I enter password in plain text format in wp-config.php?
2) What am I doing wrong?

3) Also I don’t seem to be getting my authentication emails from WP for changing the email on account? Is this a separate problem?
