From email address is changed

We are using WordPress 5.8, WP Mail SMTP version 3.0.3 and WooCommerce 5.5.2
Email are sending fine through the SMTP plugin (using admin@ GMail account) however we would like to set the “From” email address in WooCommerce > Emails > Settings to be enquiries@ but it is sending using the email address in WP Mail SMTP Settings (admin@).

We have the property “Force From Email” unchecked so I was hoping it’d use the “From Address” email field in the WooCommerce settings (Email sender options).

Can you please advise why emails are being sent with the SMTP email address?
